INGREDIENTS
Servings: 12
All-purpose flour
1 ½ cups
Salt
½ tsp.
White sugar
2 tbsp.
Butter
½ cup, chilled
Ice water
4 tbsp.
Eggs
3, beaten
Light corn syrup
¾ cup
Dark corn syrup
2 tbsp.
Light brown sugar
¾ cup
Butter
3 tbsp., melted
Salt
1 pinch
Pecans
½ cup, finely crushed
Pecans
1 cup, cut into quarters
Pecan halves
1 cup
DIRECTIONS
  1. Heat the oven to 350° F/175° C/Gas Mark 4.
  2. In a medium-sized bowl, combine the first 3 ingredients (from flour to white sugar).
  3. Cutting, add butter into flour mixture and mix until it resembles coarse crumbs.
  4. Gradually sprinkle the water over the dry mixture and keep stirring until the dough comes together and you can form a ball of it.
  5. With a rolling pin, flatten the dough ball on a floured surface.
  6. Make a circle that is an inch larger than the pie dish. Place the shell into the dish and keep it in the fridge while you prepare the filling.
  7. For the filling, combine the next seven ingredients (from eggs to finely crushed pecans).
  8. Arrange the pecans over the bottom of the pie crust.
  9. Pour the syrup mixture over the pecans and spread the pecan halves over the top of the pie.
  10. Bake for 1 hour or until firm and let it cool before serving.
